I went to an innercity highschool
The printing class room was next to the home ec. room.
One month(ok maybe just 2 weeks?)..they made chitterlings..oh man..steamed shit...as they cleaned them out. Nope

The smell of marrow is..its not shit..its more livery like old blood. Do not like that smell or taste.

Marrow bones have NOTHING to do with anything other than the enjoyment of good, body & soul nourishing food. That is goddamned tasty.

$25 is a bit pricey for a restaurant. But, operating expenses and profit.
Ask your butcher for some marrow bones. $7 - $10 per lb is typical.
Have them cut either across the grain or with it. The latter makes it easier for adding additional accoutrement. They are a fantastic starter/appetizer.

And absolutely yes on chittlins.

Also a nope on brains and stomachs and kidneys and hearts...but marrow organs and chitterlings are all 'noise' food. Not to everybody's taste loud flavor and smell wise and a bit strange.

Head cheese is good and if cooked properly smoked hog jowl is alright.

Head cheese can taste like that bacon jelly you had just not as bacony...more pork choppy. Try it.

Back in the day in England there were pork butchers, still a few around. And guess what they sold. From brains, heads, trotters, etc. Our local would make faggots (sorry USA readers) basically pig guts wrapped in stomach membrane (English haggis - though pig not sheep) served hot, you took your own bowl. My grandfather enjoyed boiled chitlins, looked like bicycle inner tube and smelt disgusting.

We were poor but happy...xe2x80xa6xe2x80xa6xe2x80xa6xe2x80xa6xe2x80xa6xe2x80xa6xe2x80xa6xe2x80xa6xe2x80xa6xe2x80xa6.. not!

We have a butcher shop in the nearest town but in the city..Kansas city all the big butchers are Mexican owned and you get all..all the parts...most large scale American beef is processed in Mexico and they keep most of the heads and stomachs for thier traditional foods.

So Yeah good luck getting a cow head in an American butcher shop....you know...for noise purposes.
